I don’t particularly like bananas, why? It is mushy food. I prefer crunchy fruits and vegetable, so to get the best out of bananas I always put it into other form of food to elevate it. I have made cookies, breads and added it to smoothies.
In Nigeria many people enjoy snacking on bananas with roasted groundnuts which they believe is a marriage made in heaven, so I will be adding groundnuts to this muffin to satisfy some cravings.
I happen to have very ripe bananas at home which is the perfect to make this moist and soft muffins. I prefer muffins because its bite size and you can easily share with others.
So let’s start baking.

3 Ripe Banana
2 cups Flour
½ cup Sugar
2 large eggs
1/2 cup vegetable oil
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla essence
1 tablespoon oats
1 tablespoon crushed groundnuts
Tools
Mixing bowl
Whisk/Fork
Muffins Tin/
Muffin cups paper liners

How To
- Mash up the bananas with a fork until mushy
- Whisk together eggs, sugar,vanilla essence,and vegetable oil together
- Add baking soda to the sifted flour and pour the wet ingredients into the dry and mix it up.
- Once mixed, get out your scoop and fill up the muffin tin
- Sprinkle some oats and groundnuts on top and bake
- Put into preheated oven( medium dial) 350 degrees and bake for 15 minutes set the timer
- Put a skewer in the middle of the muffin to check if baked, if skewer comes out clean it’s done, or when touched with fingers it springs back.
- Serve your muffin with your favorite drink or munch as a snack. Enjoy.
